Quick & Easy Yeast Rolls
I like quick & easy. So I found this recipe for rolls and I really like it. Yummy bread without the beating down and letting rise over and over. Last Sunday I made these with some honey butter (see below the roll recipe) and oh my! I ate 6 (um, or 7) of the 12 rolls myself!
Oh, and to make the rising process quicker I boil some water and put the bowl of dough on top of it sitting on a cookie cooling rack, with a towel over the top. Like I said, I want quick!
One more thing, I find mine bake better when I do an 8x10 pan and make 12 rolls.

Ingredients
1 pkg active dry yeast
3/4 c warm water (105* to 115*F)
2 tbsp sugar
2 tbsp vegetable oil
1/2 tsp salt
1 egg
2-1/2 to 2-3/4 c flour
soft butter
Directions
Dissolve yeast in water in 2-1/2 quart bowl. Add sugar, oil, salt and egg. Stir to dissolve sugar and salt. Stir in 1 cup of the flour until smooth. Cover with cloth and let rise 15 minutes or until doubled. Grease square pan, 9x9x12 inches.
Stir down batter and add 1-1/2 cups flour. Stir until mixed and turn out onto a lightly floured work surface. Knead for 3 minutes. If the dough is too sticky, knead in up to 1/2 cup of extra flour. Keep in mind that the less flour used, the lighter the rolls will be!
Divide dough and shape into balls; arrange in pan. Cover and let rise until fully doubled in size (about 25 minutes or more).
Heat oven to 425*F for at least 15 minutes before baking. Bake rolls for 12 to 15 minutes.
Remove from oven; brush rolls with melted butter while still warm for a soft and tender crust.
Honey Butter
So I was wanting honey butter to go with my homemade rolls the other day for whatever reason. Why I decided to do a search for a recipe seems silly but I'm so glad I did! Never did I think there was anything in honey butter besides the obvious. One word: YUM.

Honey Butter
Ingredients:
2 sticks real butter, (close to room temp- works best when slightly chilled still.)
2/3 C honey
¾ C powdered sugar
2/3 C honey
¾ C powdered sugar
(If your butter is too soft, you’ll end up with a gooey mess, so I just leave it out on the counter for about 20 minutes or so before beating and it turns out nice and fluffy)
Just place it all in a bowl and beat with an electric hand-mixer for 2-3 minutes on medium-high speed. Serve at room temp with warm rolls, scones, breadsticks, corn bread, waffles, toast, ….need I go on?
Tater Tot Casserole
This one is now a family favorite. Even Seoul and Sydney love the spinach in it so there is an added veggie! Just the other night I added crumbled bacon on top* and that was a hit! The recipe below is what I usually do, just a tad different than the original (see link for source below).

Ingredients
1 lb extra lean ground beef or turkey
1 onion finely chopped
1-2 cloves garlic
1 package frozen spinach
1 can Cream of Mushroom soup
2-3 tablespoons ketchup
2/3 bag mini tater tots (or enough to fully layer top)
Shredded cheese
Directions
Saute onion and garlic. Add beef/turkey and brown. Drain fat.
Add ketchup and soup. Mix well.
Pour mixture into 8x10 baking dish. Sprinkle with cheese. Add tater tots to top.
Bake at 425* for 30 minutes.
* I added extra cheese and bacon for the last 5 minutes of baking time.
Banana Cake
Easiest cake ever to make and our family inhales it within a few days. Recently I made it as cupcakes - not so bueno. I recommend it in the cake pan so the chocolate chips and brown sugar make a nice crusty layer on top! Plus, I believe you can never have too much sugar so I load up on the topping - no measuring cups involved for that part!

Snickerdoodle Cake
Oh man, this is addicting for me! I could probably eat the entire cake! I love Snickerdoodle Cookies but I'm just too lazy to make them... rolling into balls and dipping in cinnamon sugar.... too much effort. So, check this out! {Oh, and don't skimp on the frosting like I tried to do for a 9x13 cake once... just eat the extra!}
